Angie Martinez a.k.a. The Voice of New York shook the city to its core when she announced her change in employment last year. She continues to be a prominent figure for the people via radio and decided to take on a few different projects. Inking a cook book was one of them and she recently dropped ‘Healthy Latin Eating’, a cookbook that presents a healthy version of some traditional Latin dishes.
Martinez teamed up with chef Angelo Sosa to give these delicious dishes a healthy makeover. From Cuban Stewed Okra to Paella Dominicanos, the recipes in this book are delicious and incorporate a variety of healthy substitutions for traditional ingredients. Using Quinoa instead of rice and beans instead of meat are awesome ways to chef up healthy versions of traditional Latin dishes.
Martinez was featured on ABC’s The Chew recently with a killer Kidney Bean Sancocho. Most of us latinos know that Sancocho is a complete meal in a bowl that is guaranteed to warm you up and fill you out. This recipe involves plenty of veggies including sweet potato, yucca, plantain, tomato, and of course kidney beans for the meat substitute. This delicious take on a traditional Latin favorite is definitely something to try in the kitchen.
